  • Extra-virgin olive oil
  • 3 1/2 C bread crumbs.
  • 1 C whole milk
  • 2 large eggs
  • 2 lbs ground beef chuck
  • 1 C small chopped parsley
  • 1/2 C grated cheddar cheese
  • 1 clove garlic, grated
  • Kosher salt
  • 1/2 tsp red pepper flakes
  • 1/2 C grated Parmesan

Preheat the oven to 400ยบ and brush a baking sheet with olive oil. Mix milk with bread crumbs in bowl and let soak. Lightly beat eggs in a large bowl, then add beef, parsley, cheddar, garlic, 1 teaspoon salt and red pepper flakes, mixing everything together. Add the bread-milk mixture to the beef bowl and mix as well until just combined.

Shape the meat mixture into several large balls, arrange them on the baking sheet and bake until browned and firm, for 30 minutes. Remove and simmer meatballs on skillet with oil for six minutes until tender.
