  • 1 lb. Italian sausage, removed from casing
  • ¼ C. grated Parmesan cheese
  • 2 cloves minced garlic
  • 1 egg
  • ¼ C. parsley
  • ¼ C. bread crumbs
  • 2 C. tomato puree
  • 1 package manicotti shells
  • 1 C. shredded mozzarella cheese

Roughly chop the sausage, then place the pieces into a pan with a little oil. Cook through, then transfer the sausage to a mixing bowl and add salt and pepper to taste, and the garlic. Mix well, then add the egg, cheese, parsley, and bread crumbs. Spread some tomato puree on each of the manicotti shells, then stuff with the meat mixture. Place the filled shells into a lightly greased casserole dish, and pour the remainder of the sauce around the shells. Top with mozzarella cheese and bake for 1 hour at 350 degrees.
