  • 1 head cauliflower, trimmed and chopped
  • 1 C. chicken broth
  • 1 T. olive oil
  • 3 oz. garlic and herb soft cheese
  • 1/4 C. grated Parmesan

In a deep pot or saucepan, add the cauliflower, broth, and olive oil. Cover and bring to a boil over high heat. Reduce heat and continue to boil for 10 minutes. Use a potato masher to mash the cauliflower. Let liquid cook off completely before adding cheese and mashing until combined. Serve immediately.
