Cooked mushrooms with veggies are baked in a creamy mozzarella and cheddar cheese-topped casserole! Serve with any main dish!

  • 5 eggs, beaten
  • 2 c. of milk
  • 1 tbsp of olive oil
  • 2 c. of broccoli, crashed
  • 1 onion, chopped
  • 1 c. of mushrooms
  • 2 medium tomatoes, chopped
  • 1 c. of mozzarella cheese
  • 1 c. of cheddar cheese

In a mixing bowl, mix eggs, milk, olive oil, salt and pepper. Add broccoli, onion, tomatoes and mushrooms to the bowl, stir well. Place the mixture to a buttered baking dish. Sprinkle with mozzarella and cheddar cheese and bake at 350 degrees for 30 minutes.
