  • 1 lb. potatoes, peeled and thinly sliced
  • 1 lb. mushrooms, chopped
  • 1 (10 oz.) can cream of mushroom soup
  • 1 C. mozzarella cheese, shredded
  • ½ C. Parmesan cheese, grated
  • ½ C. chicken broth
  • 1/3 C. white wine
  • 3 cloves garlic, minced
  • 2 shallots, diced
  • 2 T. butter
  • ½ tsp. dried thyme
  • Salt and pepper to taste

In a greased baking dish, layer potatoes and mushrooms with mozzarella, Parmesan, garlic, and shallots. In a bowl, whisk together cream of mushroom soup, broth, white wine, butter, thyme, salt, and pepper. Pour mixture over potato layers, cover with foil, and bake for 45 minutes. Uncover and bake for an additional 15 minutes.
