Cheesy Onion Soup

Cheesy onion soup has always been my mother's favorite. Her mother made it for her, and now she makes it for me and my sister. It will quickly become a family favorite in your house, too.

  • 3 lg. onions, thinly sliced
  • 2 oz. cooking sherry
  • 1 clove garlic, minced
  • 1/4 C. vegetable stock or browned beef stock
  • 4 thick slices French bread
  • 4 oz. Swiss or Gruyere cheese sliced
  • grated Parmesan cheese

In covered saucepan cook onions and garlic in butter over low heat for 20 minutes stirring occasionally.  Add stock, 1/4 teaspoon pepper and sherry. Bring to boiling; cover and simmer for 15 minutes. Meanwhile, toast bread. Ladle soup into four soup bowls top with toasted bread and cheese then put under broiler 2-3 minutes. Top with Parmesan cheese.
