  • 2 slices of sourdough bread
  • 4 oz. cheddar cheese
  • 1 C. baby spinach
  • ½ C. mushrooms, slice
  • Salt and pepper

Saute the mushrooms with a pinch of salt and pepper. Toast the bread with butter and place the mushrooms on top. Layer the cheese on top of the mushrooms. Place the spinach on top with a drizzle of olive oil and broil for 6-7 minutes until the spinach wilts and the cheese melts.
