When you want a tasty potato side, you can easily roast up these cheesy potatoes in your oven. Mix with all these simple ingredients for a wonderful taste.

  • 5 medium-sized potatoes, cut into 1" chunks
  • 5 medium yellow onions, chopped
  • 3 sprigs fresh rosemary, stemmed
  • 1/2 C. parsley, chopped
  • 1 Tbs. paprika
  • 3 cloves garlic
  • 1 C. bread crumbs
  • 1 C. Parmesan cheese, grated
  • 1/2 Tbs. fresh ground black pepper
  • 2 Tbs. sea salt
  • 2 Tbs. extra virgin olive oil
  • Cheese and sour cream for topping

Preheat oven to 400 degrees F. Place potatoes and onions in zip lock bag. Seal the bag and massage bag to separate onion sections and evenly distribute the potatoes and onions. Place remaining ingredients except for olive oil and toppings into medium-sized food processor. Blend until a herb mixture. Add mixture to bag and re-seal. Shake throughout to coat all ingredients with mixture. Spread 2 Tbs. olive oil on baking dish. Lay out potato mixture on dish. Sprinkle any salt and pepper to taste. Drizzle additional olive oil over mixture. Bake in oven for 1 hour, while turning potatoes and onions about every 15 minutes. Take out when potatoes are golden brown. If you desire, add sour cream and shredded cheese on top.
