  • 1 T. vegetable oil
  • 1 C. white rice (15 minute)
  • 2 C. frozen mixed vegetables
  • 3 C. chicken broth
  • ½ C. cheddar cheese, shredded
  • 1 C. mozzarella cheese, shredded and divided
  • 1 T. paprika
  • Salt and pepper to taste

In a large saucepan, heat oil and add in rice, mixed vegetables, chicken broth, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for 10 to 15 minutes until liquid is completely absorbed. Remove from heat, stir in cheddar and half of your mozzarella. Transfer to a greased baking dish, season with paprika, top with remaining mozzarella, and bake for 15 minutes until bubbly.
