  • 1 box of penne pasta
  • 1 jar (24 oz.) spaghetti sauce
  • ¾ C. onion, chopped
  • 1 C. mushroom, sliced
  • 2 C. mozzarella cheese
  • ½ C. parmesan cheese
  • 1 Tbs. Italian seasoning, divided
  • 1 Tbs. oregano, divided
  • 1 Tbs. crushed red pepper, divided

Preheat oven to 375 degrees. Boil a large pot of water. Once boiling, add pasta and stir occasionally for 10 minutes. In a medium skillet, cook onion and mushrooms. After 5 minutes, add sauce and half the amount of each seasoning. Let simmer for at least 10 minutes.

After the pasta is cooked, strain. Add pasta to sauce and combine gently. Spray an 11’ pan with non-stick cooking spray. Transfer pasta into dish. Distribute the cheeses evenly across the top of the pasta. Sprinkle the remaining seasoning on top. Bake for 25-30 minutes.
