  • 2 lb. potatoes, peeled and cubed
  • 1 stick butter
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 C. milk
  • Salt and pepper to taste
  • 1 C. mozzarella cheese, shredded
  • 1 C. fresh baby peas, cooked and drained
  • Parsley for garnish

Preheat oven to 375 degrees. In a large saucepan, cover potatoes with salted water and bring to a boil. Reduce heat to a simmer and cook 15 to 20 minutes until tender. Drain and set aside. In a separate saucepan, melt butter and sauté onion and garlic until softened. Add in potatoes and mash, gradually adding milk, until mixture is creamy. Mix in butter, mozzarella cheese, salt, and pepper. Stir in peas, transfer to a greased casserole dish, and bake for 15 minutes until top is golden.
