  • 1 ½ cups peaches (sliced and chopped)
  • 1 ¼ cup flour
  • 1 ¼ cup buttermilk
  • 1 large egg
  • ¼ cup vegetable oil
  • ¼ cup sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 cups chopped frozen cheesecake
  • Butter for topping

Preheat oven to 200 degrees F. In a blender, pulse the buttermilk, egg, sugar, flour, and oil. Transfer mixture into a bowl and add in cheesecake pieces. Spray cooking spray into a large skillet. Pour ¼ cup batter for each pancake into the skillet. Place finished pancakes onto a baking sheet.
