  • 2 whole chicken breasts, skinned, boned, halved and flattened
  • 2 very ripe pears, peeled, cored, and quartered
  • 4 slices Monterey Jack cheese
  • 1/2 C. flavored bread crumbs
  • 1/2 C. ginger ale
  • 1 tsp. brown sugar
  • 1 tsp. soy sauce
  • 1/8 tsp. ginger
  • 1/2 C. chopped pecans
  • 2 tsp. butter
  • sprig of parsley, chopped

In a flat dish, press bread crumbs into chicken on all sides. In a mixing bowl, combine ginger ale, brown sugar, soy sauce, ginger, pecans, and parsley. Place breaded chicken in an oven-proof casserole dish. Top chicken with half of pear. Top with Monterey Jack cheese and dot with butter. Spoon ginger ale mixture around chicken. Bake in a preheated 400-degree oven for 20 minutes. Remove chicken to heated plates and spoon sauce around chicken.
