  • 2 Tbs. Extra-Virgin Olive Oil
  • 3 Garlic Cloves, minced
  • 1/2 C. Chopped Onion
  • 1 28 oz. can Crushed Tomatoes
  • 1 tsp. Ground Oregano
  • 1 tsp. Ground Thyme
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 3 C. Cooked Penne Pasta
  • 1/3 C. Grated Parmesan Cheese, divided
  • 1 1/2 C. Shredded Mozzarella Cheese

Preheat oven to 375 degrees. Lightly spray a 9x13" baking dish with nonstick cooking spray. Warm the olive oil in a medium skillet over medium heat. Add garlic and cook until fragrant. Add onions and continue cooking, stirring continuously, until tender. Add tomatoes to skillet. Cook and stir until tomatoes come to a boil. Reduce heat to low. Stir in oregano and thyme. Add salt and pepper to sauce as needed. Add pasta and half of the grated parmesan to the completed sauce, and mix well. Pour mixture into prepared baking dish. Sprinkle with the remaining parmesan and mozzarella. Bake for 20 minutes or until casserole is heated through.
