  • 1 (14.5 oz.) can diced tomatoes, drained
  • 1 C. mozzarella cheese
  • 1/3 C. red onion, chopped
  • 3 Tbs. basil pesto
  • 1 1/2 C. rotisserie chicken, shredded
  • 1 (13.8 oz. each) pkg. refrigerated pizza crust dough
  • 1 Tbs. Parmesan cheese, grated

Preheat the oven to 400 degrees and grease a large baking sheet. Set it aside. In a bowl, combine the drained tomatoes, cheese, onion, and pesto. Add the chicken and stir to combine. Unroll the pizza dough onto the pizza sheet and press into a 14x10-in. rectangle. Evenly spread the chicken mixture over the dough, leaving 1 in. of the edge bare. Roll up the dough, starting with the longer edge, to close the filling in. Place the dough seam side down on the baking sheet and fold the ends under. Pinch them to seal and sprinkle with the Parmesan cheese. Bake for 30 minutes, or until golden brown. Let cool for 5 minutes before serving.
