  • 1 1/4 C. fresh mushrooms, diced
  • 1 onion, finely chopped
  • 1/2 lb. Italian sausage
  • 2 C. water
  • 1 15-oz. can pizza sauce
  • 1 C. sliced pepperoni, chopped
  • 1 14.5-oz. can RED GOLD® diced tomatoes (Mexican fiesta flavor)
  • 1/4 tsp. Italian seasoning
  • 1/4 C. Parmesan cheese, grated
  • Mozzarella cheese, shredded (for garnish)

In a large saucepan, sauté mushrooms, onion and Italian sausage for 2-3 minutes or until sausage is browned. Add water, pizza sauce, pepperoni, RED GOLD® diced tomatoes (Mexican fiesta flavor) and Italian seasoning. Bring to boil. Reduce heat, cover and simmer for 20 minutes, stirring occasionally. Before serving, stir in Parmesan cheese and garnish with mozzarella cheese.

  • Sounds more than wonderful...... but artery clogging. My mom used to cook sausage and stuff and not only drain it on a paper towel, but she blotted it really well also. We did not eat a lot of fried or oil/fat laden foods, even thought both sides of my heritage are fat before my parents.
