Ingredients

  • 2 C. packed grated potatoes (raw)
  • Dash salt
  • 1 egg white, beaten
  • ¼ C. onion, grated
  • ½ C. onion, diced
  • 2 eggs
  • ¼ C. milk
  • Pepper to taste
  • ½ tsp. paprika
  • 1 T. butter
  • 2 cloves garlic, minced
  • ¼ tsp. thyme
  • ½ tsp. basil
  • 1 head cauliflower, cut into florets
  • 2 C. cheddar cheese, divided

Preheat oven to 400 degrees. Place grated potatoes in a colander in the sink, season with salt, and let sit for 10 minutes. Squeeze out excess water, transfer to a bowl, and mix with egg white and grated onion. Press mixture into pie plate and bake for 30 to 40 minutes until golden. In a small bowl, whisk together eggs, milk, pepper, and paprika; set aside. In a skillet, melt butter and sauté diced onion and garlic until fragrant. Season with thyme and basil and add in cauliflower. Cook covered for 7 to 10 minutes until tender. Sprinkle half of the cheese in the potato crust, add cauliflower mixture, and top with remaining cheese. Pour milk mixture over dish and bake for 30 to 40 minutes until an inserted knife comes out clean.
