Cheesy Potato Casserole

- 5 potatoes, skinned, boiled, and chopped
- 2 cups colby jack cheese
- 1 cup mushrooms
- 1 can cream of mushroom soup
Place partially cooked potatoes in a bowl with mushrooms and one cup of cheese.
Transfer contents to a casserole dish.
Pour soup over everything and agitate until it sinks to the bottom.
Season with salt and pepper and add remaining cheese.
Bake for 30 minutes.
