Cheesy Potato, Ham, and Spinach
Serving Size / Yield
- 3 cups Water
- 1 tsp Salt
- 1½ lbs Russet Potatoes, peeled and cut into large chunks
- 3 Tbsp Heavy Cream
- 3 Tbsp Unsalted Butter
- 1 1/2 cups Ham, Chopped
- 1 1/2 cup Spinach
- Salt & Pepper, to taste
- 1 can cream of mushroom soup
- 1 cup shredded cheddar cheese
Start by bringing a pot of water to a boil, add salt.
Put in potatoes, return to a boil, then reduce heat and let simmer for 20 minutes..
In a skillet, add oil to the pan.
When potatoes are tender, turn off heat, drain, and put back in the pan.
Mash potatoes until smooth.
Now add in heavy cream, soup, and butter, mix together.
Add in ham and spinach.
Season with salt and pepper.
Put everything in a greased casserole dish.
Add shredded cheese on top..
Bake on 350 degrees for 20 to 30 minutes or until cheese has melted.
