  • 3 C. mashed potatoes
  • 1 C. shredded cheddar cheese
  • 2 T. scallions, chopped
  • 1 large egg
  • 2/3 C. plain flour
  • Sour cream

Combine mashed potatoes, cheese, scallions, egg, and 3 T. flour in a bowl and mix well. Separate mixture into 12 equal sections. Roll with your hands and flatten into round pancake shapes. Flip each one in a dish of the remaining flour. Coat a large pan in vegetable oil and heat before adding the pancakes. Work separately, cooking them for 3 minutes or until crispy. Salt and serve with sour cream and parsley.
