Use leftover mashed potatoes to make this wonderful side dish!

Ingredients

  • 1 C. cornmeal
  • 1/4 C. warm water
  • 1 1/2 C. leftover mashed potatoes
  • 1 egg
  • 1/2 C. grated Monterey Jack cheese
  • 1 tsp. salt
  • 1 C. vegetable oil

Directions

Combine cornmeal with water and potatoes. Mix well.  Beat egg and add it to potato mixture, along with cheese and salt.  Mix well and form into patties about 3/4-inch thick.  Heat vegetable oil to medium temperature in a large frying pan.  Fry patties until golden brown on both sides.
