  • 3 sweet potatoes
  • 1 can black beans, drained
  • 1/2 C. quinoa, cooked
  • 1 Tbs. oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. cumin
  • 1/3 tsp. red pepper
  • 1/4 C. Greek yogurt
  • 1 tsp. salt
  • 1/4 C. chives, chopped
  • 1 C. cheddar cheese, shredded

Preheat oven to 350 degrees F. Bake sweet potatoes for about 45 minutes. Combine black beans and quinoa in a bowl, and set aside. In a pan, heat oil and cook onions until translucent. Add garlic, cumin, and red pepper and cook for an additional 1 minute. Set mixture aside. When sweet potatoes are done baking, remove and let cool for 5 minutes. Cut potatoes in half and scoop out potato, leaving skins as they were. Take potato scooped out and mix it with yogurt and salt. Add black beans mixture, chives, and onions to potato mixture. Spoon fillings into potato skins and top with cheddar. Broil in oven for 5 additional minutes, and serve warm.
