  • Garlic Bread
  • 1 Baguette Loaf
  • 1/4 C. Olive Oil
  • 2 Tbs. Butter
  • 1/4 tsp. Dried Basil Leaves
  • 2 Garlic Cloves, crushed
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • Topping
  • 2 C. Cooked Salmon
  • 1 Tbs. Butter
  • 1 Onion, chopped
  • 1-2 Garlic Cloves, minced
  • 1/4 C. Mayonnaise
  • 1 Tbs. Yellow Mustard
  • 2 Tbs. Black Olives, cored and sliced
  • 1 1/2 Tbs. Lemon Juice
  • 1 tsp. Dried Parsley
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 1/2 C. Cherry Tomatoes, sliced
  • 1 C. Mozzarella Cheese, shredded

Garlic Bread
Preheat oven to 350 degrees. Cut bread into slices about 1/4" thick. Evenly space the slices on a large baking pan. In a medium-sized, microwaveable bowl, combine olive oil, butter, basil, garlic, salt, and pepper. Warm at high heat until butter has melted. Stir ingredients together to fully incorporate. Spread mixture atop bread slices.
In a medium bowl, use a fork to mash up the salmon. Set salmon aside. In a medium skillet on medium-high heat, melt the butter. Add the onion and cook for about 5 minutes until tender. Place the garlic in the center of the skillet and continue cooking for 30 seconds. Remove from heat. Add the onion and garlic mixture to the salmon. Stir in the mayonnaise, mustard, olives, lemon juice and parsley. Season with salt and pepper, if needed. Spread a dollop of the salmon mixture across the top of each slice of garlic bread. Sprinkle each slice with cherry tomatoes and mozzarella. Bake for 5-10 minutes until the bread is lightly browned and the cheese has melted.
