Cheesy Salsa Chicken and Rice

Quick and easy, this dish will be a family favorite in no time.

Ingredients

  • 4 boneless skinless chicken breast halves, cut into chunks
  • 1 C. chunky salsa
  • 1/2 C. water
  • 1/2 lb. Velveeta, cut up
  • 1 1/2 C. Minute White Rice, uncooked

Directions

Spray large skillet with no stick cooking spray. Add chicken; cook and stir 4-5 minutes or until cooked through. Stir in salsa, water and cheese. Bring to boil. Stir in rice; cover. Remove from heat. Let stand 7 minutes or until liquid is absorbed and rice is tender. Stir before serving.
