This casserole makes a quick, well-balanced meal with things you have on hand! If you don't have spinach you can substitute it for a vegetable you do have!

  • 1/2 lb. bowtie pasta, al dente
  • 1 C. cooked chicken
  • 3 C. baby spinach
  • 1 C. tomato sauce
  • salt
  • 1 C. shredded mozzarella cheese, divided

Heat the oven to 350 degrees. Return the pasta to the pan you cooked it and stir in the spinach, tomato sauce, chicken, and salt. Mix well and heat on low until the spinach wilts. Pour the pasta mix into a casserole dish and add 1/2 C. mozzarella cheese and mix well. Top with the remaining cheese and bake for 15 to 20 minutes, or until the cheese is melted and bubbly.
