Cheesy Spinach Balls

These are super-easy and a fantastic combination of flavors that your guests will love.

  • 1 10 oz. package frozen chopped spinach, thawed
  • 1/3 C. butter, softened
  • 3 eggs, beaten
  • 2 cloves garlic, minced
  • 1 C. herb stuffing, crumb style
  • 1 C. Parmesan cheese, grated (you may also use Romano cheese)
  • 1/3 C. green onions, finely chopped
  • 1 Tbs. olive oil

Press all water out off the spinach. Put spinach into a large bowl and add remaining ingredients. Roll into 1-inch balls and place on a lightly greased baking sheet. Bake for 15 - 20 minutes at 350 degrees. Serve warm.
