  • 6 oz. cooked noodles
  • 1 large egg
  • 1/3 C. milk
  • 1/2 C. sour cream
  • 1 pkg. frozen chopped spinach, thawed
  • 1/2 can artichoke hearts, drained
  • 1 pkg. shredded Monterey Jack cheese
  • 3 Tbsp. grated Parmesan cheese, divided
  • 1 tsp. onion powder
  • salt and pepper, to taste

Preheat the oven to 350 degrees. Combine the egg, milk, and sour cream in a casserole dish. Stir in the spinach, artichoke hearts, Monterey Jack, 2 tablespoons parmesan, and cooked noodles. Season with onion powder, salt and pepper. Top the casserole with the remaining parmesan and cover. Bake for 15 minutes, then bake uncovered another 15 minutes. Let the dish stand 5 minutes before serving.
