Cheesy Spinach & Pine Nut Chicken

This is a wonderfully easy recipe to make! Dinner will be on the table in 30 minutes!

  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 1 pkg. fresh spinach, trimmed and washed
  • 4 slices Provolone cheese
  • 2 tsp. pine nuts
  • 1 tsp. grated Parmesan cheese
  • 1/2 C. flavored bread crumbs
  • 1/2 C. olive oil
  • 2 cloves garlic, chopped
  • sprig of fresh parsley, chopped

In a flat dish, press bread crumbs into chicken on all sides.  In a saute pan, saute garlic in half of olive oil for a minute.  Add spinach, pine nuts, and grated Parmesan.  Saute until spinach is limp. Cool and reserve.  Oil one oven-proof casserole dish.  Lay the chicken breasts in the casserole dish. On top of each chicken breast, spoon spinach mixture.  Top with Provolone cheese.  Garnish with chopped parsley.  Bake in a preheated 400-degree oven for 20 minutes.  Remove from casserole with spatula and serve on heated plates.

  • Very Good! Definitely a keeper. I might try to dip the chicken in a little lemon juice before rolling in bread crumbs next time. Husband even ate the leftovers for work, and he NEVER eats leftovers.
