  • 1 refrigerated pie crust
  • 6 C. baby spinach
  • 2 large yellow onions, diced
  • ¾ C. half and half
  • ¼ C. gruyere cheese, shredded
  • 3 large eggs
  • ¼ tsp. dried thyme
  • 1 pkg. pepperoni, sliced
  • Salt and pepper to taste

In a pastry dish, roll out the pie crust dough. Preheat the oven to 375 degrees. In a large skillet, saute the onions and sprinkle them with salt, pepper, and thyme. Add in the spinach once the onions are tender. Combine everything in a large bowl except for the cheese and whisk it all together. Pour the mixture into a prepared pie crust and sprinkle the gruyere on top. Bake the dish for 15 minutes at 375, reduce the heat to 325 degrees and bake for an additional 20 minutes. If you want a crispier dish, broil it on high for 2 minutes.
