  • 8oz fresh spinach
  • ¼ tsp grated nutmeg
  • ½ tsp paprika
  • 1½lb Maris Piper or King Edward potatoes, peeled
  • 3½oz Cheddar or gruyère, grated
  • 6fl oz milk
  • 16 oz crème fraîche

Preheat the oven to 325 F and grease a baking dish.
Place clean spinach in a large saucepan, on medium heat, cover and cook until the leaves are wilted. Drain well, and allow to cool. Chop or leave whole and put in a bowl. Then mix in the nutmeg and paprika seasoning.
Cut the potatoes to your desired size and put half in the greased dish. Spread the spinach over the potatoes and sprinkle over half the cheese.
Then layer the remaining potatoes on top of the cheese. In a separate dish, mix the milk and crème fraiche. Then pour the mixture over the potatoes and spinach.
Sprinkle evenly with the remaining cheese and bake for about 1 hour. Cool and serve.
