Ingredients

  • 1 Tbs. olive oil
  • 2 Tbs. onions, minced
  • 1 1/2 Tbs. white flour
  • 3 C. spinach, cooked, drained
  • 2 C. skim milk
  • 1 C. low-fat cheddar cheese
  • 4 eggs, divided

Directions

Heat the olive oil and brown the onions until clear. Add flour and mix well. Cook until bubbly and gradually add milk. Mix thoroughly and add the cheddar cheese and stir until melted. Remove from fire and pour over chopped spinach. Season with salt and pepper.


Add the unbeaten egg yolks one at a time. Stiffly beat the egg whites. Fold them into a buttered dish. Place the casserole dish in a pan of water and bake at 350 degrees for 30 minutes. Serve.
