  • 8 Medium White Onions, peeled
  • 1 C. Crumbled Goat Cheese
  • 4 oz. Cream Cheese, cubed
  • 1/2 C. Grated Asiago Cheese
  • 1/2 tsp. Sea Salt
  • 1/2 tsp. Ground Black Pepper
  • 2 Tbs. Olive Oil
  • 1 14.5 oz. can Low-Sodium Vegetable Broth

Preheat oven to 375 degrees. Slice off the top of each onion; reserve the onion tops. Scoop out the onion centers and discard, leaving 1/2" shells. In a small bowl, stir together the goat cheese and cream cheese until well-mixed. Pour equal amounts of the goat cheese mixture into the onion shells. Place onions in an ungreased 9x13" baking dish. Sprinkle onions with Asiago, salt, and pepper. Replace onion tops and drizzle onions with olive oil. Pour the vegetable broth directly into the baking dish. Bake for about 1 hour until onions are tender.
