This is one zucchini recipe you'll be making again and again. It's stuffed with beef and mozzarella cheese, so you know it'll be delicious. This makes a great appetizer.

Ingredients

  • 1/2 lb. ground beef
  • 1 zucchini, ends trimmed
  • 1/2 C bread crumbs
  • 2 cloves garlic, minced
  • 1 jar spaghetti sauce
  • 1/2 can sliced black olives, drained
  • 1/2 C grated Parmesan cheese
  • 1 C shredded mozzarella cheese

Directions

Preheat oven to 350 degrees.

Cook ground beef until meat is browned, about 10 minutes. Place in bowl.

Slice zucchini in half the long way and scoop out the flesh, leaving a 1/2-inch thick shell all around the zucchini. Chop the scooped-out zucchini flesh and add to mixing bowl.

Stir in bread crumbs, garlic, spaghetti sauce, black olives and Parmesan cheese to bowl with meat and zucchini.

Stuff zucchini halves with meat mixture.

Place in a baking dish and cover with foil. Bake for 45 minutes. Sprinkle 1/2 cup of shredded mozzarella cheese over each zucchini half. Bake for an additional 5 minutes until the cheese is brown and bubbling.
