Cheesy Tacos

Ingredients
- 1 med. onion, chopped
- 2 Tbs. cooking oil
- one 10-oz. can tomatoes and green chilies
- 1 tsp. dried oregano, crushed
- 8 oz. Monterey Jack cheese
- 12 taco shells
- 1 avocado, peeled and cut into 12 wedges
- 1 C. sour cream
Directions
Cook onion in hot oil until tender but not brown. Stir in tomatoes and green chilies and oregano. Simmer 20 minutes or until very thick; keep warm. Cut cheese into 12 strips. Place one strip cheese in each taco shell. Arrange tacos on baking sheet. Bake, uncovered, in 350 degree oven for 7-8 minutes, or until cheese starts to melt. Top cheese with a spoonful of tomato and chili mixture, an avocado slice, and a dollop of sour cream.
