  • 3 Tbs. butter, softened
  • 1 C. hash browns, cubed or shredded, defrosted
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 C. shredded cheddar cheese
  • 8 eggs
  • 1 package fresh cherry tomatoes, sliced in half
  • 2 tbsp parsley
  • 1/2 C. whipping cream or 1/2 C. fat free half and half

Begin by preheating the oven to 350 degrees. Spread butter in 9-inch glass baking dish. Sprinkle the hash browns and half of the cheese over butter. Season with salt and pepper. Break eggs carefully onto cheese. Pierce yolks with a fork, but don't stir the eggs; leave them separate. Dash with hot sauce, if desired. Place sliced tomatoes on eggs and pour cream over all. Sprinkle with remaining cheese. Bake at 350 degrees for 25-30 minutes.
