Ingredients

  • 4 C. fresh spinach, chopped
  • 2 tbs. water
  • 3 cage-free eggs
  • 3 egg whites
  • 1/3 C. green onions
  • ¼ C. whole milk
  • ¼ tsp. cayenne pepper
  • 1 cup fresh tomato, diced
  • ½ cup feta cheese, crumbled

Directions

Combine spinach and water in a small saucepan over medium-low heat. Cover and cook for 5 minutes. Combine eggs, egg whites, green onions, milk and cayenne pepper in a medium mixing bowl.

Place spinach, tomatoes and feta cheese in an ovenproof skillet. Pour egg mixture into skillet. Cook for 7 minutes over medium-low heat, covered.

Remove cover and transfer skillet to oven. Broil for 1 minute. Allow frittata to cool before serving.
