This cheesy rice is loaded with squash, broccoli, and carrots. If you want to add a bit of spice, mix in 1/4 tsp. curry powder. Serve it with a side of chicken or pork for a well-founded meal the whole family will love.

  • 1 C. instant white rice, cooked
  • 1/2 C. broccoli
  • 1 medium yellow squash
  • 1 medium carrot
  • 2 cloves garlic
  • 1 tsp. oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/3 C. cheese, shredded
  • cilantro, for garnish

Put the oil in a nonstick pan on the stove and add the minced garlic. Add the broccoli, squash, and carrots. Cook for 2 minutes on low. Season with salt and pepper. Cover and cook for another 2 minutes. Add the cooked rice and stir to mix well. Top with cheese. Once the cheese starts melting, about 1 minutes, turn off the heat and mix well.
