  • 3 Zucchini, Sliced
  • 1 Red Pepper, Sliced and Diced
  • 2 tbs basil
  • 2 tbs green onion, thinly sliced
  • 3/4 tsp garlic powder
  • 1/2 cup Parmesan, Grated
  • 1/2 cup of mozzarella cheese, grated
  • 1/2 cup mozzarella, to top the casserole
  • Salt
  • Pepper

Start by preheating the oven to 350 degrees.
Grease an 8x8 baking dish.
In a bowl, mix the zucchini, red pepper, onions, basil, thyme, garlic, and the cheeses.
Blend until everything is nicely coated.
Season with salt and pepper.
Put in the baking dish and bake for 25-30 minutes.
When zuchini is just about done, remove from oven and sprinkle remaining cheese on top.
Place dish back in the oven and cook until cheese is melted for about 10 minutes.
