  • 3 medium zucchini
  • 1⁄2 cup onion, chopped
  • 1 garlic clove, crushed
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 (5 ounce) can evaporated milk
  • 1⁄2 cup sour cream
  • 1⁄2 cup cheddar cheese, shredded

Take out a large skillet and for about 5 minutes, saute the zucchini, garlic and onions in melted butter. Remove the skillet from heat. Sprinkle flour and salt onto vegetables. Stir in evaporated milk, sour cream and cheese. Take out a 1-quart casserole dish and spoon mixture into it. Bake at 350 degrees F for 35 minutes or when cheese melts and dish begins to bubble. Serve immediately.
