Ingredients

  • 1/2 C. thinly sliced garlic
  • ¼ C. leeks, white and light green, thinly sliced
  • 2 Tbsp. butter
  • 6 C. water/chicken stock
  • 1 Tbsp. chicken bouillon granules
  • 1/4 C. chopped fresh tomato
  • 3 eggs, beaten
  • 5 Green Onions
  • Salt, pepper, and cumin to taste
  • * Vegetarians may substitute Water instead of Chicken Broth
  • ** In Lieu of Salt, feel free to incorporate a low-sodium substitute

Directions

In a large pot over medium heat, sauté garlic and leeks until soft not brown. Stir in tomatoes and allow to thicken. Pour in chicken stock and bring to a boil. Stir in bouillon granules, reduce heat and simmer a minimum of 20 minutes. Whisk in eggs, and season with salt and pepper just before serving. Green Onions should be cut on a bias and used a garnish for plating.
