Ingredients

  • 1/4 C. olive oil
  • 1 lb. Italian Turkey Sausage
  • 2 bell peppers, julienned
  • 2 red onions, julienned
  • 1 Tbs. fennel seed, toasted
  • 1 Tbs. Truvia™
  • 4 cloves garlic, smashed and chopped
  • 2 Tbs. chopped ginger
  • 1/4 C. basil, chopped
  • 2 Tbs. chopped thyme
  • 2 Tbs. red wine vinegar
  • 2 Tbs. tomato paste
  • Sea Salt
  • Pepper

Directions

Heat the oil in a large skillet over medium high heat. Add the turkey and brown on all sides about six to eight (minutes lowering heat if too hot). Remove the sausage and drain on paper towel. Do not discard oil or fat in pan. Keeping the pan hot add the peppers, onions, ginger, garlic, fennel seed and Truvia™. Sauté until caramelized on medium heat. Add the tomato paste after approximately three minutes. Cook for approximately one more minute and then add the vinegar and lemon juice. Set aside once seasoned. Place the turkey on a plate with the peppers and onions on top. Serve with a touch of the cranberry sauce on top and serve alongside your favorite grain or salad.
