  • 3 cups flour
  • 1 cup white sugar
  • The zest of 1 lemon
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 12 tablespoons of butter, cubed
  • 1/2 cup heavy cream
  • 1/2 cup of toasted almonds
  • 1 cup dried cherries

Preheat your oven to 375 degrees and line a baking sheet with parchment paper. In a large mixing bowl, combine sugar, lemon zest, baking powder, cinnamon, and salt. Then, using a handmixer, stir in the butter until the dough reaches a cornmeal consistency.

Mix in the cherries and almonds. Slowly mix in the heavy cream until combined, and then flatten out the scone dough into a large, 1 inch thick circle. Cut the dough into wedges and transfer the wedges to the lined baking sheet. Bake for 17-20 minutes and serve immediately.
