  • 1 ½ C. vegetable oil
  • 3 ½ C. sugar, divided
  • 6 tsp. vanilla extract, divided
  • 6 eggs
  • 4 C. flour, divided
  • 1 C. unsweetened cocoa powder
  • ½ tsp. baking powder
  • Dash salt
  • ½ C. fresh cherries, chopped (extra for topping)
  • 2 ½ sticks butter, softened
  • 1 ¼ C. brown sugar
  • ¾ C. peanut butter
  • ¼ C. milk
  • 1 (12 oz.) package semisweet chocolate chips
  • 1 C. heavy whipping cream

Preheat oven to 350 degrees. In a large bowl, use an electric mixer to combine oil, 3 cups of sugar, and 3 teaspoons of vanilla. Mix in eggs one at a time until well combined. Add 1 ½ cups of flour, cocoa powder, baking powder, and salt until smooth. Stir in cherries and transfer batter into greased baking pans (depending on how many layers you want). Bake for 30 minutes until an inserted toothpick comes out clean. Remove from oven and set aside to cool. In a separate bowl, cream together butter, ½ cup of sugar, and brown sugar until fluffy. Beat in peanut butter and remaining vanilla; lower mixer speed and mix in remaining flour and milk until thick. Assemble cake by sandwiching peanut butter mixture in between brownies. Pour chocolate chips into a bowl. In a small saucepan, heat cream until just boiling. Pour cream over chocolate chips, cover, and let sit for 5 minutes. Whisk chocolate until smooth and as the ganache thickens, pour over cake. Garnish with cherries and refrigerate to set up.
