Cherry Cream Cheese Griddlecakes

These are a great pick me up if you're tired of the same old pancakes. My children love them.

Ingredients

  • 2 C. milk
  • 4 oz. cream cheese, softened
  • 2 Tbs.butter, melted
  • 1 tsp. vanilla
  • 1 egg, beaten
  • 3 C. flour
  • 1/4 C. sugar
  • 1 C. frozen dark sweet cherries, thawed, chopped
  • confectioners' sugar for topping

Directions

In a lg. mixing bowl, combine milk and cream cheese; blend well. Add butter, vanilla and beaten egg; blend well. Add flour and sugar; mix well. Fold in chopped cherries. Pour a 1/4 C. of batter on a hot, greased griddle or frying pan. Flip when bubbles form around edges. Fry the other side until lightly browned. Spinkle with confectioners' sugar. Makes 20 1/4 C. size or 10 1/2 C. size.
