Cherry Custard Pie

Cooking entirely in the microwave, this is an easy dessert that the kids can help with.

  • 8" or 9" pre-made pie crust, cooled
  • 1/2 C. sugar
  • 1/2 tsp. salt
  • 6 Tbs. flour
  • 2 C. milk or cream
  • 2 eggs, beaten
  • 2 tsp. vanilla
  • 1 can prepared cherry pie filling

In a microwave safe bowl, place the sugar, salt and flour. Whisk in milk. Microwave for 4 minutes. Whisk, microwave repeatedly, stirring every minute or two until the pudding is thick and boiling. Pour some into 2 beaten eggs, return egg mixture to main bowl and whisk. Microwave until bubbling. Cool and add vanilla. Pour into pie crust. Top with can of prepared cherry pie filling. Chill and serve cold.
