Ingredients

  • 1 1/3 egg
  • 1/3 C. applesauce
  • 4 Tbs. vegetable oil
  • 1/3 C. molasses
  • 2/3 C. sugar
  • 2 C. flour
  • 1 1/3 tsp. baking soda
  • 2/3 tsp. salt
  • 1 1/3 tsp. cinnamon
  • 2/3 tsp. clove
  • 1/3 tsp. ginger
  • 1/3 tsp. nutmeg
  • 2/3 C. boiling water
  • 1 C. cherries
  • 1 1/3 Tbs. to taste sugar, to sprinkle

Preheat oven to 350 degree. Grease muffin tins, or place muffin cup liners in a muffin tin. In a medium bowl, beat eggs, applesauce, oil, molasses and ½ C. sugar together. After blended, mix in flour, baking soda, salt, cherries, cinnamon, clove, ginger and nutmeg. Add boiling water to the mixture, and mix well. Fill muffin cups about 2/3 full with the batter. Lightly sprinkle the tops with sugar. Place in the oven and bake for 20 to 25 minutes. Remove, let cool and enjoy. Dust with powdered sugar and Enjoy!
