  • 1 pt. sun sugar tomatoes, halved
  • 1 pt. cherry tomatoes, halved
  • 2 T. extra virgin olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/4 C. fresh parsley, chopped
  • 1 C. freshly grated Parmesan cheese

Preheat your oven to 400°F. Place tomato halves in a 13x9x2-inch ceramic baking dish and coat with olive oil. Sprinkle with salt, pepper, and parsley. Top the tomatoes with cheese and bake for 10 minutes. Preheat broiler and broil for two minutes. Serve immediately.
