Ingredients

  • Crust:
  • 9 graham crackers
  • 2 tablespoons sugar
  • 6 tablespoons unsalted butter
  • Filling:
  • ¼ cup sugar
  • 6 ounces cream cheese
  • ½ teaspoon vanilla extract
  • ¾ cup heavy cream
  • 1 ½ pound fresh cherries, pitted and sliced
  • 1 tablespoon raspberry jam

Directions

Crust:
Preheat the oven to 350°F. Crush the graham crackers and mix in the 2 tablespoons of sugar. Add butter and continue mixing. Move the mixture into a 9-inch pan with a removable bottom. Press firmly and evenly along the bottoms and sides of the pan. Bake for 10 minutes, or until browned. Let cool completely.

Filling:
Using an electric mixer, beat the cream cheese, vanilla and ¼ cup sugar, until light and fluffy. Add cream and beat until evenly mixed. Pour the filling into the crust evenly. Arrange the sliced cherries on top of the filling. In a microwaveable bowl, combine the jam and 1 teaspoon of water, microwaving it for 20 seconds. Mix well and brush atop of the cherries. Refrigerate for at least 30 minutes before serving.
