This spin on a shortcake will be the talk of your next party. Individual cups of this trifle make it easy to serve to all your guests. No doubt everyone will be impressed with the balance of juicy cherry and sweet cream.

  • 2 cups pitter cherries
  • 1 tbs. sugar
  • 2 cups heavy cream
  • ΒΌ confection sugar
  • 1 tsp. vanilla extract
  • 1 pound cake

In a bowl mix your cherries and sugar.
Drain the cherries through a sieve to catch small seeds.
Set aside while you prepare your cream.
Use an electric mixer to beat together the cream, confectioners sugar and vanilla until firm peaks form.
Take your sweet pound cake and cut it into chunks.
Line the bottom of a glass bowl with 1/3 of the cake.
Begin to layer your trifle with the cherry compote and then the whipped cream. Repeat this layering 2-3 more times depending on the size of your bowl. Refrigerate for at least 3 hours and serve cold.
