Bread so delicious you'll want to eat all of it yourself. But that's okay--it's made with zucchini, so it's gotta be healthy. Right? Right!

  • 2 eggs
  • 3/4 C. granulated sugar
  • 1/3 C. vegetable oil
  • 1/3 C. lemon juice
  • 1/4 C. water
  • 2 C. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2/3 C. shredded unpeeled zucchini
  • 2/3 C. dried tart cherries
  • 1 Tbs. grated lemon peel

Put eggs in large mixing bowl. Beat with an electric mixer on medium speed 3 to 4 minutes or until eggs are thick and lemon colored. Add sugar, oil, lemon juice and water; mix well. Combine flour, baking powder, cinnamon, baking soda and salt. Add flour mixture to egg mixture; mix well. Stir in zucchini, cherries and lemon peel. Grease and flour bottom of 8 1/2 x 4 1/2-inch loaf pan. Pour batter into prepared pan. Bake in preheated 350 degree F oven 55 to 65 minutes or until wooden pick inserted in center comes out clean. Let cool in pan on wire rack 10 minutes. Loosen edges with a metal spatula. Remove from pan. Let cool completely. Wrap tightly in plastic wrap and store in refrigerator.

  • Write your review hereI followed the directions as printed except I used craisons instead of cherries. Bread was moist and delicious. When I make it again, I will use more cherries/craisons. Don't omit the lemon juice and zest. They really added to the flavor!

  • I made this with a few modifications. I used 1 cup of all purpose flour and 1 cup of wheat flower. I used mild instead of water and sugar/Splenda instead of straight sugar. It turned out really good! I have never made zucchini bread in my life and it was so easy! I highly recommend this recipe.
